A Taste of Lofoten’s History

In historic surroundings on Svinøya in Svolvær, Børsen Spiseri invites you to a dining experience where Lofoten’s rich coastal culture meets modern North Norwegian gastronomy.

Børsen Spiseri is housed in one of Svolvær’s most traditional buildings, an old trading pier dating from 1828. Here, among old timber walls and solid wooden beams, history is quite literally part of the structure. The building was once part of the bustling life around the fishing village, where fishermen, merchants and locals met across generations. Today, the dining experience takes center stage, but the connection to the sea and to history is just as strong.

The kitchen at Børsen Spiseri draws inspiration from nature, the sea and the proud food traditions of Lofoten. Local ingredients play the leading role, with a particular love for fish and seafood from the cold, clean waters off the islands. Stockfish holds a very special place, both in Lofoten’s history and on the restaurant’s menu. This time-honored ingredient has been the foundation of trade and settlement in the region for centuries, and at Børsen Spiseri it is given new life through modern preparation and exciting flavor combinations. The restaurant’s signature dish since 2007, Tørrfisk Royal, is a tribute to precisely this heritage.

The menu follows the seasons and combines the best of North Norwegian ingredients with inspiration from international cuisine. The result is flavors that both surprise and tell the story of the place they come from.

There is something truly special about taking a seat at the table at Børsen Spiseri. The old timber walls, the cozy atmosphere and the closeness to the sea create a setting that makes the meal into something more than just good food. Whether you come to taste Lofoten’s traditional stockfish, enjoy a full evening of food and wine, or celebrate a special occasion, everything is in place for a memorable experience.

The restaurant is located in the heart of the lively fishing village of Svinøya, surrounded by traditional rorbuer, fish racks and historic buildings. Here, the distance between past and present is short, and Lofoten’s history is still a natural part of everyday life.

Welcome to Børsen Spiseri, where history lives in the walls and Lofoten is served on the plate.
