In recent years fresh seafood has gained well-deserved recognition and popularity worldwide, making it especially exciting to be able to offer selected restaurants and hotels serving genuine top-class seafood – Norwegian seafood from the coast of Norway.
Norway boasts extensive resources in our sea and coastal areas, resources which we exploit by means of fishing and aquaculture. The resulting culinary experiences are based on world-class ingredients.
Norwegian seafood has on several occasions been used in the Bocuse d’Or World Cuisine Contest, and De Historiske now includes celebrated kitchens along our lengthy coast which, through the generations, have developed recipes to delight guests.
Over time they have also taken new inspirations from other cultures and traditions, such that the exquisite dishes from sea and fjord served today offer culinary experiences reflecting the variety of Norway’s culinary culture.
It is therefore with the greatest pleasure that De Historiske invites travellers to enjoy our third “Culinary Route” – with a flavour of coast and fjord.
The hotels and restaurants on the Culinary Route have been hand-picked using the following criteria:
- A house menu based on selected local ingredients and dishes with local roots
- Seasonal variation reflected in the menu, using only the finest seasonal ingredients the sea has to offer
- All seafood must be fully traceable
- Menu presented and explained by competent, passionate and motivated staff
- Wine list in harmony with the menu, and a selection of Norwegian aquavit recommended for the house menu according to taste.
