In the late 18th century Bergen, the bourgeoisie experienced a period of prosperity, inspiring excesses of joy and happiness which gave birth to the establishment of the "lyststedene", places where they could socialise and enjoy the pleasures of life. Lauritz Holte Wentzel built Bellevue in 1796. He was one of the leading merchants in Bergen and helped found a number of associations for amateur dramatics and music. It is believed that Bellevue, in the days of Wentzel, was one of the more popular places in Bergen for socialising and entertainment. It is even rumoured that bishop Johan Nordahl Brun took part in the festivities here, singing and raising his glass with the guests. It was also a tradition to salute guests as they arrived at these "lyststedene", and Bellevue had cannon fire as guests arrived for festive occasions.
The following century saw a time of turbulence, with a number of owners. But then in 1899, the restaurant was purchased by Mathilde and Erik Herman Jernstrøm, starting a century-old tradition of good food and wine which has been safeguarded by the continuous efforts of four generations.
Today, Lyststedet Bellevue is run by Eric Saudan - the fourth generation of the family and restaurateur.
Lyststedet Bellevue is well-known throughout Norway as one of the best restaurants in Bergen.
