All visitors to Lysebu remember and talk about our cuisine, and we are proud to say that we have one of the best in Norway. Our guests have great expectations when they come to us, and we aim to outdo these so their expectations are even greater on their next visit. Lysebu’s food philosophy has been immortalised in a cookery book – a delightful journey through Scandinavian food culture. This philosophy is based on 10 basic doctrines, or if you will, Lysebu’s 10 commandments:
1. Our cuisine and the way in which we think about food shall have a Scandinavian fundamental tone with a French accent.
2. We shall always make use of the best and freshest ingredients.
3. All dishes shall be prepared from the very start. We have our own butcher, confectioner and our own smokehouse.
4. Our cuisine at Lysebu shall be inspired by the four seasons.
5. Cooking at Lysebu shall be more than a culinary art. Cooking shall be a combination of professional skills, aesthetic motivation, curiosity and creativity.
6. “He who stands with both feet on the ground remains still”. The only way to reach true heights is to grow, and to grow one has to dare to break boundaries.
7. The motivation to break boundaries shall never come before quality.
8. We shall be innovative in the way we plate up and present dishes. Each plate shall be a work of art.
9. The way in which our staff interacts and behaves is an important factor in our guests’ culinary experience.
10. A satisfied guest is the only true reward for our efforts.
